Simple Zucchini Pasta
Ingredients:
1 brown onion, diced
2 red chilli, sliced
3 garlic cloves, sliced
2 zucchinis, thinly sliced
¼ cup extra virgin olive oil
1 cup flat leaf parsley, chopped
Juice of 1 Lemon
500g linguine pasta
Salt
Pepper
Optional: 125g canned tuna fillets in oil, drained
Method:
Cook pasta per packet instructions. Reserve ½ cup cooking water to add to the sauce.
Sauté onion, garlic, chilli in oil 1 tbsp oil on med-low heat until soft and fragrant (~8-10 minutes). Remove with a slotted spoon and keep aside.
Add remaining oil to pan. Sauté zucchini over med-high heat with salt and pepper until cooked and slightly charred/brown.
Add onion, garlic, chilli back to pan. Add cooked pasta, parsley, leftover pasta water and tuna (if using). Toss over high heat for 1 minute until combined.
Add lemon juice, salt and pepper, drizzle with olive oil to serve.
